The paper presents the substantiation of the possibilities and economic efficiency of the project for the production of niche vegetable oils in Ukraine using the example of dill oil. The market and technological possibilities of such production, the existing limitations of the market infrastructure for the export of large volumes of agricultural products in the conditions of martial law are considered. The production of dill oil allows to increase and diversify the production of vegetable oils and, unlike sunflower, to avoid a negative impact on the upper layers of the soil, ensuring the sustainable development of agricultural production. Ukraine is a key player in the global market of vegetable oils and has already exceeded the maximum possible share in the structure of cultivated areas of such oil crops as sunflower, but has a unique opportunity to expand its role in the market due to niche vegetable oils. Favorable natural conditions for the cultivation of such crops, combined with the availability of modern facilities for the processing of oil crops, qualified personnel, determine the potential for the successful development of such production in Ukraine. The efficiency indicators of the project of growing dill seeds on an area of 100 hectares and processing them into oil for the existing agricultural enterprise were determined. The calculated indicators indicate the high economic efficiency of such projects even under martial law in Ukraine. Risk analysis was carried out using sensitivity analysis and project scenarios.
